A beer to relax the shoulders.

"Try this. Don't ask, don't think. Just try it."

Long bar. Narrow. Half below street level. Jonathan had tapped a keg of Allagash Saison earlier that week — and now it was Friday, shift done, the glass in front of him doing exactly what a saison should: thick foam, sticky lacing, dry grass and sour dough, the quiet display of harmony. One eye in the glass. One eye on the ramp.

Nassia glides down. Before she says a word: "This is the beer that every Greek wants and doesn't know it yet."

A collision course was set that night. Years later — Ikaria, Athens, a cliffside nano-brewery, a recipe dialed in, a label designed with patience — that beer exists. It's called Peacetime Saison. It's brewed in Greece, with the spirit of Ikaria. A new quiet harmony on display.

Peacetime Saison

The name was chosen for what it does to a room. Peacetime — a word that makes shoulders drop, a concept that lets people feel quietly proud of themselves for choosing it. No need for walls. No need for solidarity. Just ease, friendliness, and nothing going wrong.

Mild. Light-bodied. Harmonious. A saison that reconnects the craft drinker to something they forgot they were looking for — and introduces everyone else to something new that doesn’t overwhelm. 5.5%. 440ml can. Brewed in Greece, with the spirit of Ikaria.

Not a backdrop. A root.

2011

Ikaria

A cantina on the island's most crowded beach. A scarf catching the Aegean wind. Two people introduced by a friend with good instincts. Ikaria was already the root before anyone knew there was a tree to grow.

2016

Homebrew turns serious

Competitions. First place. Best in Show. The idea stops being an idea and starts demanding to be built.

2018

Slow Down opens

A 130L electric nano-brewery on a cliffside road in Ikaria. Taproom, kitchen, and enough brew days to turn every mistake into method.

Now

Redoubt. Reconnoiter. Regrouping.

Peacetime is in the wild. The next brewing chapter is being drawn up. The long way is still in motion.
